When Southern Hemisphere players leave for Europe, how come they stop playing for their countries?

For example, when a New Zealand player decides to go to Europe, they somehow stop playing for the All Blacks. Why? I mean, in football, players play half way around the world from their countries and still get to play in their national team. Is it a distance issue, a rules issue, professional issue? please explain.
